“L’Incandescent” is evocative of its name: bright and effusive with a depth of flavor and color that seems to glow from within. This rose champagne is made in the saignee method, meaning the grapes macerate with the skins for 14 days before the juice is “bled” off from the pulp, resulting in a richly colored, concentrated pinot-noir based rose. It’s wild and rustic, with notes of crushed roses and violet, tart cherry and earth. The wine’s zero dosage keeps it racy and almost savory.

Based in the Grand Cru village of Verzy, Sebastien is a trailblazer in vitiforestry and biodynamic agriculture, with over 1,300 trees planted among his vineyard, vines treated with homeopathic tinctures, and chickens used as the primary method of pest control.
