Unlike the many manipulated juices of the region, Vincent Charlot farms his fruit entirely organically and with biodynamic principles, implementing a natural, hands-off mentality in the cellar. Cover crops are favored over plows, with majority of holdings dedicated to Pinot Meunier. The 2012 ‘Fruit de Ma Passion’ is Meunier dominant, growing in clay/limestone soils, aged 8 months in oak. Bottled unfined and unfiltered; disgorged in Nov. 2016.
