Stéphane Moreau’s vision is continued on by his assistant winemaker and wife Virginie, who produce lifted, Dauvissat-style wines amongst the new generation of Chablis producers. Extensive sur-lie aging and healthy fruit create vivacious wines marked by chalky, saline-tinged acidity. This flinty and mineral-driven wine is marked by flavors of wet rocks, gunflint, citrus peel, chalk, and tangy lemon juice. Bright acidity and medium-bodied, there’s really not a bad moment to pop this bottle.
