This side project from Adrien Dhondt (of Dhondt-Grillet) aims to show Chardonnay and the Cotes des Blancs in a more singular fashion. The champagnes under this label are bottled under less pressure to show a more vinous side. Pair with ceviche, caviar, or even a really good bag of potato chips (we recommend sour cream and onion).
