This personal project of winemaker Pablo Calatayud is made mostly from amphora-aged Mando, a grape native to the Valencia region of Spain. ‘Safra’ (Saffron) shows clean and rusic notes of bright berries, balsamic, and wet soil -- think Pais meets Pinot Noir.
