Headed by Pablo Calatayud, in the heart of Spain’s Valencia region, Celler del Roure comprises 50 hectares of organic vines, ranging 15-70 years in age. A pioneer of the Mando variety, as well as other indigenous grapes, Pablo enjoys experimenting with modern technology on his unique grape varieties. ‘Safra’ is a Mando dominant blend, rounded out with 10% Alicante Bouchet and 5% Monastrell.
