Stéphane Moreau’s vision is continued on by his assistant winemaker and wife Virginie, who produce lifted, Dauvissat-style wines amongst the new generation of Chablis producers. ‘Pargues’ is a single-vineyard growing site located between the prestigious crus of Vaillons and Montmains and is comprised of 40 to 50-year-old vines. Moreau-Naudet vinifies their expression in steel and neutral wood (30%), leading to a spry and stony wine noted with flavors of white flowers, crushed rocks, and lemon skin.
